Following the completion of primary fermentation and maceration, the free-run wine is delicately transferred to tanks for settling and is then pressed at an incredibly low pressure (0.08 bars) to prevent any bitter extraction. After an overnight settling, both the free-run and pressed wines find their way to barrels. Notably, the wine labeled ‘Ten’ is bottled without any fining or filtration to preserve its unique character.
The resulting wine embodies a brooding and intense character. The aromatic journey begins with enticing notes of ground cacao, raspberry, and Friar plum, followed by an enticing blend of spices and a subtle lavender hint. On the palate, you’ll experience firm, mature tannins, a clear indicator of Ten’s potential for aging, culminating in a long, luxurious, velvety finish.
